"Learn to cook scapes"

Chef Kevin Altomare of Hudson's Restaurant will be offering a demonstration on how to make pesto from garlic scapes from 10 to 11 a.m. each Saturday at the Hudson Farmer's Market.

Altomare, a 2005 graduate of the Culinary Institute of America, also will demonstrate how to use the pesto in a pasta dish along with other fresh ingredients from the market. He will be using scapes from Thaxton's Organic Garlic in Hudson, which, by the way, recently received its official organic certification after several years of effort.

"Q & A with Fred Thaxton"

"I didn’t learn of Fred Thaxton of Thaxton's Organic Garlic through the markets or his strong relationship with several local chefs and restaurants, including The Greenhouse Tavern. No, it was oddly enough through my neighbor who is Fred’s oral surgeon. My neighbor knew he’d make a great Q&A for Cleveland Foodie and went on and on relaying stories he learned and sharing his new-found garlic knowledge. And after learning more for myself, I knew my neighbor was right."

Grow your own garlic at home, don't buy 'seeds' from the masters

"It's October, and in case you didn't know, it's time to plant the garlic.

Buy a better bulb from a grower, separate the cloves without breaking the paper skin and drop each into a rich, loamy soil. Not only should they make it through our Northeast Ohio winter, they'll also multiply into full bulbs by next summer."

Georgian Crystal or Music? Consider growing and using these garlic varieties.

"Fred Thaxton and his wife Christine grow 14 varieties of garlic, some hotter than others. Christine's favorite is Georgian Crystal, which has a full, round flavor."

Read about the Cleveland Garlic Festival and what Fred had to say about it...

"It was like going to a smorgasbord of fine food, great music and entertainment for an entire family,” says Fred Thaxton, who runs Thaxton's Organic Garlic in Hudson, along with his wife, Christine. The couple, who plant more than 14,000 cloves on their 10 acres, were even crowned — with garlic bulb hats — king and queen of the festival.

Farm Life, Chickens, and More

"I discovered that an old friend who lives in Hudson, Ohio has a really beautiful farm where he grows organic garlic. It's called Thaxton's Organic Garlic. He attends the local farmer's markets where he has tastings and offers samples every week. Here's a link if you'd like to take a look at his Local Harvest site."

Random Thoughts: Area farmer's market is fresh and charming

"One treasure I did go home with was some fresh garlic bulbs from Thaxton's Organic Garlic. Some of the bulbs still had their green shoots attached. Most people don't use them, but they have just as much flavor as the bulb and work great in almost any dish."
